Homemade Mac and Cheese
Prep Time: 20 min; Cook Time: 40 min; Total Time: 1 hour
Make for meal prep for a quick meal that you can pop in the oven on a Tuesday night!
Ingredients:
- ½ cup butter + enough to prepare the baking dish
- Salt
- 1 lb macaroni noodles
- ½ cup flour
- 5 cup milk
- 1 tsp mustard powder
- Black pepper
- 3 ½ cup sharp cheddar cheese (grated)
- 2 cup Gruyere cheese (grated)
- 1 ½ cup Parmesan cheese (divide into 1 cup + ½ cup)
- 1 cup bread crumbs
- 4 tsp olive oil
Instructions:
- Preheat your oven to 375°.
- Prepare a baking dish by spreading a thin layer of butter on the bottom and sides.
- Boil a large pot of salted water and add macaroni, cooking for about 5 minutes. Drain the noodles.
- In a large pot, melt a cup of butter on medium heat. Add the flour and stir, cooking until the flour changes color (about 3 minutes).
- Add milk and whisk until it’s well mixed. Add mustard powder, salt, and pepper.
- Bring this mixture to a simmer and allow to cook until the sauce thickens. Remember to stir!
- Take this pan off the heat and stir in the cheeses until smooth.
- Add the macaroni and then transfer the mixture to your prepared baking dish.
- In a separate bowl, mix the bread crumbs, olive oil, and ½ cups of Parmesan cheese. Spread this mixture over the noodles and sprinkle with black pepper.
- Cook the macaroni in the oven for about half an hour. The mac will be melted, yummy goodness. Be sure to allow it to rest for ten minutes before serving.
Baked Ziti
Prep Time: 20 min; Total Time: 2 hrs 20 min
Ingredients:
- ¼ cup olive oil
- 1 lb ground sausage
- 1 cup onion (chopped)
- 2 tsp minced garlic
- Salt
- 28 oz can tomatoes
- 28 oz can tomato puree
- 1 lb. ziti pasta
- 16 oz. ricotta cheese
- Black pepper
- 1 ½ cup Parmesan cheese (divided into ½ cup + ½ cup + ¼ cup + ¼ cup)
- 2 TBSP butter
- 1 TBSP basil (chopped)
- 1 lb mozzarella (grated)
Instructions:
- Preheat your oven to 375°.
- Heat the oil over medium heat and brown the ground sausage. Remove the sausage and leave the grease in the pan.
- Add the onion to the grease and cook for about four minutes. Then, add the garlic for another minute. Then add salt.
- Add the crushed and pureed tomatoes and allow the sauce to simmer for about half an hour, stirring occasionally.
- While the sauce cooks, boil the pasta until al dente.
- Combine the ricotta, pepper, ½ cup of Parmesan, a bit of salt, and ½ tsp of garlic.
- Take the sauce off of the stove. Add the cooked sausage, butter, basil, and some salt.
- Combine the sauce with the cooked noodles and add ½ cup of Parmesan.
- In your prepared pan, layer half the pasta mixture, half the cheese mixture, and ¼ cup of Parmesan cheese. Add the other half of the pasta and the other half of the ricotta. Top with mozzarella and the last ¼ cups of Parmesan.
- Cook for about 45 minutes until the yummy goodness is golden brown.
