Ingredients
- Pickled red onions:
- 1 red onion, sliced thin
- ½ cup apple cider vinegar
- 2 TBSP sugar
- 1 tsp salt
- Tots:
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp pepper
- 1 bag tater tots
- Queso:
- 1 lb. chorizo, remove the wrap
- 1 yellow onion, diced finely
- 12 oz. Velveeta, cubed
- 1 can Rotel
- 1 small can of green chiles
- To serve:
- 1 jalapeno, sliced thin
- 1 can of black olives, sliced and drained
Instructions
1. Preheat the oven to 425°F, and prepare a baking sheet by lining it with parchment paper.
2. Use a heatproof container with a lid to hold the red onions.
3. In a small pot, heat the vinegar, sugar, salt, and a half cup of water, bringing it to a boil and stirring until the sugar and salt are dissolved.
4. Pour the liquid over the onions, submerging them.
5. Allow to cool for at least half an hour. Place the lid on the onions until ready to eat.
6. Mix the onion powder, garlic powder, and pepper in a small bowl.
7. Spread the tater tots in a single layer on the baking sheet, sprinkle the seasoning mixture over them, and toss to coat.
8. Cook for 25 minutes.
9. On medium-high heat, cook the chorizo and yellow onion, breaking the chorizo into smaller pieces, as it cooks. Cook for about 4 minutes, until the chorizo is browned and the onion is translucent.
10. Drain the fat, and return to the pan. Add the Velveeta, Rotel, and green chiles, continuing to cook on low heat while stirring, for about 3 minutes, until the cheese has melted.
11. Prepare to serve by separating the tater tots in half, spreading a layer of queso over the tots in the center, layering with jalapeno slices, olives, and pickled red onions, and then adding the remaining tater tots. The remaining queso should be available for dipping.

- Pickled shallots:
- 3 shallots, sliced thin
- ½ cup white vinegar
- 3 TBSP honey
- ½ tsp crushed red pepper
- Taco Meat:
- 2 TBSP avocado oil
- 1 lb ground beef
- 2 TBSP taco seasoning
- Nachos:
- 1 large bag of tortilla chips
- 2 cups pepper jack cheese, shredded
- 2 cups cheddar cheese, shredded
- Toppings:
- ½ cup pinto beans, drained and rinsed
- ½ cup pico de gallo
- ½ cup sour cream
- ½ cup cheese
- sriracha
Instructions
1. Heat the vinegar, honey, red pepper flakes, and ¼ cup of water to a simmer. Pour it over the shallots in a mason jar and let it rest for 30 minutes.
2. Brown the ground beef, add the taco seasoning, and ⅓ cup of water. Once done, drain the meat and set it aside.
3. Preheat the oven to 425°F. Spread the chips on a sheet pan. Top with the cheeses and cook until they’re melted, about five minutes.
