Superior Roast Turkey

Where to Buy Thanksgiving Dinner Mohnton PA

Ingredients:

  • 12-20 lb. turkey, brined and tied
  • 1 onion, wedged
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 tsp minced garlic + 1 ½ tsp minced garlic
  • 3 tsp thyme + 2 tsp thyme
  • 4 tsp sage + 2 tsp sage
  • 8 cups chicken stock
  • 16 oz. butter
  • 1 tsp salt
  • 2 tsp pepper
  • 1 tsp Worcestershire sauce
  • 1 lemon (zest and juice)
  • 2 tsp parsley

Instructions:

  1. Add the butter, tsp of salt, 2 tsp of pepper, Worcestershire sauce, lemon zest and juice, parsley, 1 ½ tsp minced garlic, 2 tsp thyme, and 2 tsp sage to a food processor.
  2. Pulse a few times, scrape the sides down, and pulse again to a smooth texture.
  3. Preheat the oven to 325°F and make adjustments to the oven rack to accommodate the turkey.
  4. In the bottom of the roasting pan, add the onion wedges, chopped carrots and celery, 3 tsp minced garlic, 3 tsp thyme, 4 tsp sage, and 8 cups of chicken stock. Then, place a rack in the roasting pan above these elements.
  5. Take ¼ of the butter mixture from the food processor and melt on the stovetop on low heat.
  6. Set the turkey on the rack. Slice your hands between the skin and breast and rub the rest of the butter mixture under the skin and all over the rest of the turkey – within joints and everywhere else. Turn the turkey over with the breast down, and brush the back with the butter mixture that you melted; turn it over and brush the top. Sprinkle salt and pepper over the turkey.
  7. Place the roasting pan in the oven and cook for about 14 minutes/pound. Baste the bird every thirty minutes, adding water if necessary. When the turkey begins to brown, tent it with foil and continue cooking until the thickest part of the thigh reaches 160° F.
  8. When the turkey reaches the desired temp, remove it from the oven and allow it to rest for half an hour, covered with foil to prevent it from drying out.

Tips for Turkey Perfection:

  • Thaw the turkey in advance. Preparation begins on the Monday before Thanksgiving Day, and your turkey should be thawed by then.
  • Turkey prep:
    • Monday – Brine
    • Wednesday night – air-dry in the fridge
  • Truss the turkey – wrap cooking twine around the turkey and join the legs
