Roasted Sweet Potatoes and Asparagus with Chicken
Ingredients:
- 1 whole chicken, prepped with backbone removed and bird flattened)
- Salt and pepper
- ¼ cup chili and garlic sauce
- 1 lime (zest + juice)
- ¼ tsp ginger
- 3 tsp honey
- 3 medium sweet potatoes, chopped roughly into ½” pieces
- 1 TBSP olive oil
- 1 bunch asparagus, prepped and halved
Instructions:
- Preheat the oven to 425°F.
- Lay out the chicken with the breast up on your sheet pan, and sprinkle salt and pepper over it.
- In a bowl, mix the garlic and chili sauce, lime zest, lime juice, and ginger. Dip out half into a separate bowl; mix in the honey.
- Brush the leftover mixture over the chicken, and roast for 20 min.
- Toss the sweet potatoes and olive oil in a bowl, seasoned with salt and pepper.
- Spread them around the chicken and roast for another 20 min until the temp reaches 165°F.
- Add salt to the asparagus and add that to the pan. Roast another 10 min.
- Remove from the oven, and allow the chicken to rest for a few min before carving.
Rosemary Chicken with Roasted Broccolini
Ingredients:
- 2 tsp parsley
- 2 tsp rosemary
- ¾ tsp minced garlic
- 2 tsp brown mustard
- 3 TBSP olive oil, divided
- Salt and pepper
- 1 lemon, sliced thinly
- 4 chicken breasts
- 2 bunches of broccolini
- 1 red onion, wedged
- ½ tsp crushed red pepper
Instructions:
- Preheat the oven to 425° degrees F.
- Mix the parsley, rosemary, minced garlic, brown mustard, and one tablespoon of olive oil in a bowl. Add salt and pepper.
- Put two lemon slices under the skin of each chicken breast along with some of the seasoning mixture, reserving half of the bowl’s contents to rub over the top of the chicken
- Roast on the sheet pan for 20 min.
- Prepare the broccolini by tossing with the rest of the lemon slices, olive oil, onion, red pepper, salt, and pepper.
- Add the broccolini around the chicken onto the sheet pan, and roast for another 13 min until the chicken reaches 165°F.
Steak and Fries
Ingredients:
- 4 steaks, 1” thick – pat dry
- Salt and pepper
- 2 large potatoes, cut into wedges
- 2 TBSP olive oil
- 2 tsp minced garlic
- 2 tsp Italian seasoning
- ¾ cup Parmesan
- Salt and pepper
- 2 tsp parsley
Instructions:
- Preheat the oven to 375°F.
- Prep the sheet pan with cooking spray or parchment paper.
- In a single layer, spread out the potato wedges on one side of the sheet pan. Toss with olive oil, garlic, Italian seasoning, Parmesan, salt, and pepper.
- Bake for 25 min.
- Turn the oven up to broil.
- Salt and pepper the steaks and place them on the other side of the sheet pan.
- Broil for about five min/side to achieve a mid-rare doneness, longer as desired.
- Allow steaks to rest before serving.
