Tailgate-Ready Chili
Total Time: 40 min; Prep Time: 5 min; Cook Time: 35 min
Ingredients:
- 1 onion (chopped)
- 1 bell pepper (chopped)
- 1 can stewed tomatoes (14 oz)
- 4 cans tomato sauce (8 oz)
- 1 can ranch beans
- 1 can pinto beans
- 1 can light red kidney beans
- 1 can dark red kidney beans
- 1 can Rotel diced tomatoes
- 1 package of chili seasoning
- 2 lb ground beef
Instructions:
- Saute the onions and bell peppers.
- Add the ground beef and brown. Drain.
- Add the meat, onions, and pepper to a large pot.
- Add all of the canned ingredients; no draining is required.
- Cook for 35-40 minutes. Serve right away or prepare ahead of time. The flavor develops further over time.
Grilled Jalapeno Bacon Wraps
Prep Time: 10 min; Cook Time: 10 min + 30 min; Total Time: 50 min
Ingredients:
- 10 jalapenos, halved and deseeded
- 8 oz cream cheese
- 16 oz bacon
- Toothpicks
Instructions:
- Preheat the oven to 350°.
- Char the jalapenos on a grill until they begin to darken.
- Fill the jalapeno halves with cream cheese.
- Halve the bacon strips and wrap the bacon around the cream cheese-filled jalapeno halves.
- Hold the bacon in place with a toothpick.
- Place each onto a baking sheet lined with parchment paper and bake for about half an hour.
Grilled Buffalo Wings
Prep Time: 10; Cook Time: 30 min; Total Time: 40 min
Instructions:
- 8 lbs chicken wings
- 2 cups brown sugar
- 2 cups hot sauce
- ½ cup butter
- 2 TBSP apple cider vinegar
- ¼ cup sugar
- 2 TBSP Italian seasoning
- ¼ cup chili powder
- 2 TBSP black pepper
- 1 ½ TBSP cayenne pepper
Instructions:
- Mix the brown sugar, hot sauce, butter, and vinegar in a saucepan and bring the mixture to a boil.
- Reduce the heat and simmer until the butter melts and the mixture is heated (7 minutes).
- In a large ziplock bag, combine the granulated sugar, Italian seasoning, chili powder, black pepper, cayenne pepper, and one cup of the sauce after it has cooled.
- Coat the wings, one batch at a time, within the ziploc bag.
- Grill for about 15 minutes, turning midway and basting with the rest of the sauce. Check to make sure that the juices are clear.
