Sweet Potato Casserole
Prep Time: 15 min; Bake Time: 40 min; Total Time: 55 min
Ingredients:
- 3 lbs sweet potatoes
- 1 ¼ cup brown sugar
- 3 TBSP melted butter
- 2 tsp cinnamon
- ½ tsp salt
- ½ cup milk
- 2 cups marshmallows (small ones work best)
- 1 cup pecans, toasted
Instructions:
- Preheat the oven to 375°F.
- Peel and cube sweet potatoes. Boil them in salted water for about 20 minutes until tender when punctured with a fork. Drain the sweet potatoes.
- Mash the sweet potatoes – by hand or with a kitchen stand mixer.
- Add the brown sugar, butter, cinnamon, and salt, and stir well. Add milk a little at a time, stirring until you reach a nice consistency – not liquid, not thick-thick.
- Prepare a medium-sized casserole dish with cooking spray or butter.
- Spread out the sweet potato mash and layer on the marshmallows.
- Bake for about 25 minutes, until the marshmallows turn light brown.
- Garnish with the pecans and serve.
Holiday Tips:
- Make ahead – minus the marshmallows. When ready to cook on the day of Thanksgiving, add five minutes to your cooking time. Add the marshmallows after 15 minutes.
- The sweet potato mixture can be frozen for up to 3 months if you’re a super-duper holiday prepper.
Candied Sweet Potatoes
Prep Time: 15 min; Cook Time: 40 min; Total Time: 55 min
Ingredients:
- 2 lbs sweet potatoes
- ½ cup butter
- ¼ cup maple syrup
- ½ cup brown sugar
- 1 tsp cinnamon
Instructions:
- Preheat the oven to 350°F.
- Boil the sweet potatoes in salted water for about 25 minutes, until tender when poked with a fork.
- Drain the potatoes.
- Peel (it will come off easily) and cut the sweet potatoes into ½” cubes.
- Spread the cooked sweet potato cubes out in a casserole dish.
- Combine the butter, syrup, brown sugar, and cinnamon in a small pot and cook on low-medium heat, stirring until it begins to boil.
- Pour this mixture over the sweet potatoes.
- Bake the sweet potatoes for about 35 minutes.
Sweet Potato Pie
Prep Time: 30 minutes; Cook Time: 50 min; Total Time: 1 hour, 20 min
Ingredients:
- 1 pie crust (store-bought or homemade)
- 1 ½ lbs sweet potatoes
- 2 TBSP butter, room temp
- 1 small can (5 oz.) evaporated milk
- 4 eggs
- 2 tsp vanilla extract
- ½ cup dark brown sugar
- ½ cup granulated sugar
- 1 tsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp salt
Instructions:
- Cook the crust until lightly golden. Remove and allow to cool.
- Poke the sweet potatoes with a fork all over each potato and microwave on a paper-towel-lined plate for 5 minutes. Turn them over and microwave for another 5 minutes.
- Let the potatoes cool once they’re tender.
- Cut them lengthwise and scoop out the potato directly into your food processor.
- Add the butter and pulse to a pureed texture.
- Add the milk, eggs, and vanilla extract; scrape the sides.
- Pulse to a smooth texture.
- Add the two kinds of sugar, cinnamon, ginger, nutmeg, allspice, and salt. Pulse again to a smooth texture.
- Add the filling to your crust.
- Bake for about 50 minutes – the filling should still wiggle a bit in the center.
- Let the pie cool on a rack for a couple of hours.
- Add whipped cream if desired.
