Meatballs – from The Redner’s Markets Deli
Select a small or large meatball platter, sauced in marinara or brown gravy. We’ll provide your order either warm and ready to serve or cold and ready to heat.
Meatball Recipe
Prep Time: 10 min; Cook Time: 20 min; Total Time: 30 min
Yields 12 servings
INGREDIENTS:
- 1 lb. ground beef
- 1 lb. ground pork
- ½ cup Italian breadcrumbs
- ½ cup milk
- 1 medium onion, diced
- ½ tsp garlic powder
- 1 tsp Italian seasoning
- 1 egg
- 4 tsp dried parsley
- ¼ cup parmesan, shredded
- 1 tsp salt
- 1 tsp pepper
INSTRUCTIONS:
- Preheat the oven to 400°F.
- Mix all of the ingredients.
- Create 4 dozen balls from the meat (1 ½ tablespoons each).
- Bake for about 20 minutes.
- Sauce in either marinara or brown gravy.
Redner’s Fried Chicken – from the deli or use Homemade Chicken Tenders
Prep Time: 20 min; Cook Time: 10 min; Total Time: 30 min
Yields 6 servings
INGREDIENTS:
- 2 boneless and skinless chicken breasts
- 1 cup milk
- 2 tsp lemon juice
- 1 tsp sugar
- 2 tsp cornstarch
- 2 TBSP hot sauce
- 1 ½ tsp pepper, divided
- 1 cup breadcrumbs
- ¾ cup all-purpose flour
- 1 TBSP onion powder
- 1 tsp salt
- Oil for frying
INSTRUCTIONS:
- Cut the chicken into strips, cutting against the grain.
- Mix the milk, lemon juice, and sugar in a small bowl. Then, whisk in the cornstarch.
- Add the hot sauce and ½ tsp of pepper. Whisk to combine.
- Place the mixture and the sliced chicken into a ziploc bag. Mix gently and marinate in the refrigerator for 30 minutes to an hour.
- Heat the oil for frying to 365°F. (Sprinkled water will pop in the grease. Be careful not to add too much.)
- Mix up the batter ingredients as the oil heats. (breadcrumbs, flour, onion powder, salt, rest of pepper)
- Remove the chicken, a few pieces at a time, and press into the batter.
- Fry the tenders for about 3 minutes on each side (The smaller the piece, the faster the cook).
- Remove the chicken when done and drain on a paper towel-lined platter. (165°F on a meat thermometer)
