Memorial Day Cookout Food

If you’re planning a spectacular Memorial Day cookout, the food should be the star! Rely on Redner’s Markets for party trays that will make your day incredibly easy, as well as the ingredients to throw on the grill and pull together the perfect side dishes and desserts!

Cajun Lemon Pepper Grilled Chicken Wings

Prep Time: 20 min; Cook Time: 25 min; Total Time: 45 min

Ingredients:

  • 4 lbs chicken wings
  • 4 TBSP vegetable oil
  • 4 tsp Cajun seasoning, divided
  • 1 ½ tsp garlic powder, divided
  • Salt and pepper
  • 2 tsp parsley
  • 1 tsp lemon zest
  • 2 ½ TBSP lemon juice

Instructions:

  1. Prepare the grill for cooking at medium-level heat.
  2. Prepare the wings by tossing them in a couple of tablespoons of vegetable oil, three tsp of the Cajun seasoning, one tsp of garlic powder, salt, and pepper.
  3. Brush the grates of the grill with oil to prevent sticking.
  4. Place the wings on the grill and close the lid.
  5. Flip occasionally while the chicken cooks, reaching 165° on a meat thermometer. (20-25 min)
  6. Mix the parsley, lemon zest, lemon juice, teaspoon of Cajun seasoning, ½ tsp of garlic powder, salt, and pepper.
  7. Toss the cooked wings in this mixture and serve.

Broccoli Slaw

Prep Time: 20 min; Chill Time: 5 min; Total Time: 25 min

Ingredients:

  • ½ cup dried cranberries
  • ¼ cup apple cider vinegar
  • 1 TBSP honey
  • Salt and pepper
  • ½ cup olive oil
  • 1 head of broccoli, divided into five pieces, including the stems (cheater’s note – purchase shredded broccoli slaw instead)
  • ¼ head of red cabbage divided into three pieces
  • ½ cup sliced almonds, toasted
  • ½ red onion, sliced thinly
  • ½ cup parsley, chopped

Instructions:

  1. Boil water in a kettle or pot. Pour over the dried cranberries and let them soak for a few minutes. Drain and put to the side for future use.
  2. Combine the apple cider vinegar, honey, salt, and pepper in a bowl.
  3. Add the olive oil while whisking well.
  4. Using a shredder implement of a food processor, shred the broccoli and red cabbage.
  5. Add the shredded veggies to the mixed-up dressing.
  6. Fold in the cranberries, almonds, red onions, parsley, and more salt and pepper.
  7. Transfer to a serving bowl, and enjoy!

Sparkling Lemonade

Total Time: 25 min

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • Fresh mint
  • ½ cup lemon juice
  • ½ cup blackberries
  • ½ cup raspberries
  • ½ cup strawberries, halved
  • 2 liters soda water
  • 1 lemon, sliced

Instructions:

  1. Heat the sugar and water over medium heat until the sugar is dissolved fully.
  2. Add a few mint sprigs and allow to steep for about ten minutes. (Throw away this used mint.)
  3. Pour your sugar and mint syrup into a pitcher and add the lemon juice, berries, and sliced lemons. Stir well.
  4. Just before serving, fill half with ice and top with soda water.
  5. Stir and serve, garnishing with fresh mint if you like.
