Rice and Spicy Salmon
Packed with healthy fats, protein, and flavor, this filling meal will tickle the taste buds and leave your crew satisfied.
Prep Time: 20 min; Cook Time: 10 min; Total Time: 30 min.
Ingredients:
- 4 TBSP soy sauce, divided (3 TBSP + 1 TBSP for drizzle)
- 2 TBSP rice wine vinegar
- 1 TBSP honey
- 1 TBSP sesame oil
- 1 tsp ginger
- 1 TBSP minced garlic
- 1 ½ TBSP sriracha sauce
- 4 salmon fillets (skinless)
- ⅓ cup mayo
- 3 cups cooked rice (variety of your choice)
- 3 small English cucumbers, sliced
- 1 avocado, sliced
- Sesame seeds
Instructions:
- Preheat the oven to 425 ̊, and prepare a baking sheet by lining it with parchment paper or spraying it with cooking spray.
- Mix the soy sauce, vinegar, honey, sesame oil, ginger, garlic and 1 tablespoon sriracha in a small bowl.
- Lay the salmon fillets on the baking sheet, dry by patting with a paper towel, and brush on the soy sauce concoction.
- Bake for about 11 minutes.
- Mix the rest of the sriracha and the mayo.
- Divide the rice among the number of guests in bowls.
- Flake the salmon fillets and lay the chunks on top of the rice.
- Layer the cucumber, avocado, and a drizzle of soy sauce followed by a sprinkle of sesame seeds.
- Serve with the mayo dressing on the side.
Frittata Caprese
Prep Time: 20 min; Cook Time: 20 min; Total Time: 40 min.
Ingredients:
- One dozen eggs
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- 2 TBSP avocado oil
- 1 package grape tomatoes
- 1 TBSP minced garlic
- 1 cup mozzarella cheese
- 8 oz. pesto sauce
Instructions:
- Preheat the oven to 400 ̊.
- Add the eggs, milk, salt, and pepper to a large bowl and whisk up with a fork.
- On medium heat in a cast iron or other oven-safe skillet, heat the oil. Cook the grape tomatoes, moving them around, for about six minutes, until they burst. Add in the minced garlic and cook until fragrant.
- Add the whisked eggs to the skillet; add the mozzarella; stir.
- Lower the heat and cook without stirring until the edges set – a couple more minutes.
- Put the skillet in the oven for another ten minutes.
- Remove from the oven to cool and drizzle over the top with pesto sauce.
Homemade Pesto Sauce
Ingredients:
- ⅓ cup walnuts
- 1 TBSP minced garlic
- 2 cups fresh basil, packed
- ¾ tsp salt
- ½ tsp black pepper
- ⅔ cup extra virgin olive oil
- ½ cup Parmesan
Instructions:
- Pulse the walnuts and garlic in a food processor.
- Add the basil, salt, and pepper.
- Pulse about ten times until the texture is pasty.
- As the processor runs, slowly add the olive oil.
- Add the Parmesan and pulse a few more times.
- Store in an airtight container in the fridge or use immediately.
