Easy Recipes Using Rotisserie Chicken

Easy Recipes Using Rotisserie Chicken

Chicken and Broccoli Casserole

Ingredients:

  • Cooking spray
  • ¼ cup butter
  • 2 quarts of broccoli florets
  • 2 TBSP olive oil
  • 4 cups shredded rotisserie chicken
  • 1 medium yellow onion, diced
  • 2 tsp minced garlic
  • ¼ cup flour
  • 1 tsp dry mustard
  • ¼ tsp cayenne pepper
  • 4 cups milk
  • 4 oz. cream cheese
  • ⅔ cup grated Parmesan
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • 8 oz. Velveeta, cubed
  • 8 oz. sharp cheddar, grated
  • 3 cups cooked rice
  • 1 cup Ritz crackers, crushed

Instructions:

1. Preheat the oven to 350°F, and prepare a baking dish by spraying it with cooking spray.

2. Salt a large pot of water, bring it to a boil, and add the broccoli. Cook for about 2 minutes, or until it reaches a slightly tender but still crisp texture.

3. Drain the broccoli, and rinse it with cold water. Set aside for later.

4. Wipe out the pan and return it to the stovetop. Add the butter to melt, and then sauté the onion and garlic, stirring occasionally, for about three minutes.

5. Add the flour, dry mustard, and cayenne, stirring until well combined. Then, cook for about one minute to remove any uncooked flour flavor.

6. Slowly add the milk, stirring continuously, and let the mixture thicken for about 5 minutes.

7. Lower the heat, and add the cream cheese and Parmesan cheese, whisking until combined.

8. Add the salt, black pepper, and paprika, whisking to combine.

9. Add the Velveeta and whisk until melted.

10. Fold in the shredded chicken and broccoli.

11. Melt the last 2 tablespoons of butter; stir in the crushed Ritz crackers.

12. Spread half of the rice on the bottom of the dish, and top it with half of the broccoli and chicken mixture. Repeat this layering one more time—lastly, top with the remaining cheddar and the crackers.

13. Cook for about half an hour. Let cool before serving.

Chicken Pasta Salad

Ingredients:

  • 16 oz. penne pasta
  • 1 cup plain yogurt
  • 1 cup mayo
  • 2 TBSP Dijon mustard
  • Lemon zest
  • 2 TBSP lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp cayenne pepper
  • 3 cups of shredded rotisserie chicken
  • 2 celery stalks, chopped
  • 5 green onions, sliced thinly
  • 2 cups grapes, halved
  • 1 cup fresh parsley, chopped
  • ¼ cup fresh dill
  • ½ cup sliced almonds, toasted

Instructions:

1. Salt a large pot of water, bring it to a boil, and add the pasta.

2. Cook the pasta according to the package instructions, then drain and rinse it with cold water. Allow it to cool.

3. Mix the yogurt, mayo, mustard, lemon zest, lemon juice, salt, pepper, and cayenne.

4. Fold in the pasta, chicken, celery, green onion, grapes, parsley, and dill.

5. Refrigerate until ready to serve.

6. Before serving, sprinkle the almonds on top.
