Week Night Chicken Spaghetti

Ingredients:
- 1 package of angel hair pasta
- 2 cups of cooked chicken (canned, rotisserie, home-cooked, whatever)
- 1 can cream of chicken
- 1 can cream of mushroom
- 1 can diced tomatoes with green chiles
- 1 block of cream cheese, cut into cubes
- 1 tsp Salt
- ½ tsp pepper
Instructions:
- Salt a pot of water, and bring it to a boil.
- Add the pasta and cook for about five minutes.
- Drain out the pasta water and put the pasta back in the pot.
- Throw in the cooked chicken cream of chicken, cream of mushroom, diced tomatoes, cream cheese, salt, and pepper.
- Mix and heat on the stovetop until the cheese is melted, and the meal is heated through.
Parmesan Encrusted Baked Chicken
Prep Time: 15 min; Cook Time 20 min; Total Tie: 35 min
Ingredients:
- 1 cup mayo
- ¾ cup Parmesan
- 1 tsp garlic powder
- 1 cup bread crumbs (Italian seasoned)
- 4 chicken breast halves (skinless, boneless)
Instructions:
- Preheat the oven to 425°.
- Prepare a baking sheet by lining it with parchment paper.
- Combine the mayo, Parmesan, and garlic powder in a small bowl.
- Dump the bread crumbs in a different bowl.
- Coat the chicken in the mayo mixture and then the bread crumbs.
- Place the chicken on the baking sheet.
- Bake for about 20 minutes. The chicken must reach 165° on a meat thermometer.
Chicken Fried Rice
Prep Time: 5 min; Cook Time: 10 min; Total Time: 15 min
Ingredients:
- 3 eggs
- 1 TBSP water
- 1 TBSP margarine or butter
- 1 TBSP oil
- 1 onion, diced
- 2 cups of cooked rice, refrigerated and cold
- 1 cup of cooked chicken, chopped
- 1 bag of mixed veggies
- 2 tsp ginger powder
- 2 ½ TBSP soy sauce
- 1 tsp black pepper
Instructions:
- Beat the egg and water, set aside.
- Heat the oil in a skillet and saute the onion until translucent.
- Add the rice and cook for a couple more minutes.
- Add the chicken, soy sauce, ginger, and pepper.
- Cook for another five minutes. Scrape one side of the skillet empty.
- Add the whisked egg, moving as the edges get done until the egg is cooked.
- Mix the ingredients together.
Chicken Buffalo Wraps
Prep Time: 15 in; Cook Time: 10 min; Total Time: 25 min
Ingredients:
- 1 TBSP oil
- 1 TBSP margarine or butter
- 2 cups chicken, cut into small pieces
- ¼ cup hot sauce
- Tortillas
- Lettuce, shredded
- Celery, diced
- Blue cheese dressing for serving
Instructions:
- Melt the butter over medium-high heat.
- Add the chicken and cook until no longer pink.
- Add the hot sauce and coat the chicken.
- Divide the chicken among tortillas and top with lettuce and celery.
- Roll the wraps.
- Serve with blue cheese for dipping.
