Stuffed Eggs
Ingredients:
- 1 dozen eggs
- ½ cup mayo
- 2 tsp mustard
- 3 TBSP salt + 1 tsp salt
- ½ tsp sugar
- ½ tsp black pepper
- ¼ tsp paprika
Instructions:
- Add the eggs and water to a large pot until the eggs are covered. Salt the water.
- Bring to a boil, allow the eggs to boil for five minutes. Remove them from heat and let stand for about ten minutes.
- Remove the eggs from the hot water and cool them in icy water.
- Once cool, peel the eggs under running water.
- Cut the eggs in half on the long side, remove the yolks, place them in a bowl, and set the white halves to the side.
- With a fork, mash the yolks and incorporate the mayo, mustard, salt, sugar, and black pepper. Sample the filling and adjust the salt and pepper for taste.
- Spoon the filling into a plastic sealable bag, seal the bag, and clip one of the edges off at the bottom with scissors. Use this “piping” tool to fill the egg whites with the yolk filling.
- Add a sprinkle of paprika to the tops of your stuffed eggs for pizzazz and zest!
You can pre-game this food item up to three days in advance and store it in the fridge in an airtight container.
Crockpot Beer Cheese Dip
Ingredients:
- ½ cup beer of your choice
- ½ tsp Tabasco sauce
- 16 oz. Velveeta
- Bread, tortilla chips, pretzels, or fruit/veggies for dipping
Instructions:
- Add the beer, sauce, and cheese to your crockpot. (Adjust the Tabasco to your preference.)
- Cook on high, lidded, for about 35 minutes, stirring occasionally.
- Adjust to low heat to serve with your bread, chips, etc.
Key tips:
- Keep the cooker over ½ full to prevent scalding.
- If you don’t have a slow cooker, you can make it on the stovetop; just be sure to stir consistently on medium heat until melted and all ingredients are well incorporated.
