Bean Salad
Prep Time: 15 min; Total Time: 15 min
Ingredients:
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 TBSP honey
- ½ TBSP minced garlic
- 1 tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp black pepper
- 3 cups cooked rice (variety of your choice)
- 1 can light red kidney beans (rinsed and drained)
- 1 can black beans (rinsed and drained)
- 1 can whole kernal corn (rinsed and drained)
- 4 green onions, chopped into small pieces
- 1 bell pepper, chopped into small pieces
Instructions:
- Mix the oil, vinegar, honey, garlic, salt, cumin, chili powder, and black pepper thoroughly to create the dressing.
- In a large bowl, add the rice, kidney beans, black beans corn, onions, and bell pepper.
- Toss to mix the salad, and coat with the dressing.
Mac and Cheese
Prep Time: 15 min; Cook Time: 40 min; Total Time: 55 min
Ingredients:
- 2 cups raw macaroni pasta
- ½ cup margarine
- ½ cup flour (all-purpose)
- 1 ¾ cups milk
- 1 cup sour cream
- 8 oz. Velveeta cheese, cut into squares
- ¼ cup Parmesan cheese
- ½ tsp salt
- ½ tsp ground mustard
- ½ tsp black pepper
- 2 ½ cups shredded Cheddar cheese
Instructions:
- Salt and boil water to cook the macaroni; cook using the package as a guide.
- Preheat the oven to 350° and grease a medium-sized baking dish.
- On the stovetop over medium heat, melt the butter or margarine in a saucepan. Add the flour and mix until the texture is smooth, not lumpy.
- Gradually add the milk, stirring to remove all lumps. Once the milk is added and the mixture starts to boil, keep stirring and allow it to cook until the texture thickens.
- Lower the heat, and add the sour cream, Velveeta, Parmesan, salt, ground mustard, and black pepper.
- Once the macaroni pasta is done, drain it and toss the shredded cheddar.
- Add the macaroni to the baking dish and pour the cheese sauce over it.
- Bake for about 40 minutes. The mac and cheese will be beautifully golden and bubbly delicious.
