

Pesto Salmon & Zoodles in Parchment
DINNER FOR TWO
Ingredients:
- 2 small zucchini (about 4 cups spiralized)
- 1 cup frozen corn kernels, thawed
- 1 cup cherry tomatoes
- 3 tablespoons pesto
- 2 salmon fillets
- Salt/pepper
- Garnish: lemon and fresh basil
Instructions:
- Preheat oven to 400°F
- Add spiralized zucchini to large mixing bowl. Add corn, tomatoes, and two tablespoons of pesto. Toss
- Rub the remaining pesto on the salmon and season, if desired
- Place vegetable mix on parchment paper, top with salmon fillet. Place on baking sheet and cook for 15 minutes
