Great Grilled Steak

Ingredients

8 oz porterhouse steak, well aged
2 teaspoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon Black pepper, coarse ground
1 teaspoon butter

Preparation

Trim any excess fat from the edge of the steak. Drizzle on and rub into each side a bit of olive oil. Sprinkle on and rub into each side a bit of sea salt and pepper. Let stand at room temperature for about an hour.

Heat up the grill (gas, electric, or charcoal). If you're using charcoal briquettes, follow the directions on the package for starting, and let the briquettes burn until covered with fine gray ash.

Sear the steak quickly on one side (about 2 minutes), then turn and sear on the other side for 2 minutes. Remove the steak from the grill and lower the grill temperature to moderate. If you're cooking with charcoal, spread out the charcoal to reduce the heat.

Put the steak back on the grill, being careful to turn the steak at a slight angle (45 degrees) from its first position to achieve a pleasing grill pattern on the surface of the steak. We taste things first with our eyes. Grill the steak another 2 to 3 minutes on each side to the desired degree of doneness, as tested on an instant-read thermometer (135-140 degrees for medium rare).

Remove the steak from the grill and serve immediately. A well-marbled, well-aged steak needs nothing but a bit of salt and pepper to taste great. Most of the steaks you buy at your local supermarket, however, can't possibly compare. Whatever the grade, whatever the price, they will very likely be improved by a bit of butter.
