Egg Bake with Green Chiles

Rated

Ingredients

6 oz monterey jack cheese, shredded
12 slices french bread, stale
1 stick butter
14 oz canned green chilies
6 whole large eggs
1-1/2 cups milk
1/2 tsp salt
1/4 tsp pepper

Preparation

* This recipe needs to be prepared 12 hours before serving.

Butter both sides of the bread and then butter a 9 x 13 casserole dish. Place half of the bread in the dish in a single layer. Place the chiles so they lay flat over the bread in a single layer. Cover the chiles with the grated cheese and top with the remaining bread in a single layer.

Beat together the eggs, milk, salt and pepper in a bowl. Pour over the bread to cover evenly. (If the bread is very dry an additional egg along with an additional 1/4 cup milk may be needed.) The bread should be thoroughly soaked but not soupy. Cover the casserole and refrigerate overnight.

Bake the casserole uncovered in a preheated 375° oven for 40 - 45 minutes until the top is puffed and browned. Cut in squares to serve. This is good either hot or at room temperature.
