Cream Cheese Raspberry Pie

Ingredients

1-3/4 cups graham cracker crumbs or 21 graham cracker squares
7 tbsp unsalted butter, melted
2 cups fresh or frozen raspberries
1 lb cream cheese, softened at room temperature
1/2 cup sugar
1/4 tsp salt
2 whole eggs
1 whole egg yolk
1 teaspoon lemon juice
1 cup sour cream
2 tbsp sugar
1 teaspoon vanilla extract
2 tbsp sugar
1 cup fresh raspberries, for garnish

Preparation

Crust Preparation:

If you are using graham cracker squares, crush them into fine crumbs in a food processor or put them into a plastic bag and crush them with a rolling pin. Put the crumbs and butter into a 10-inch pie pan and use your fingers to mix them together. Press the crumbs onto the bottom and sides of the pie pan.

Filling Preparation:

Preheat the oven to 375 degrees F. Spread the raspberries over the bottom of the crust and refrigerate. Beat the cream cheese, sugar and salt until absolutely smooth. Beat in the eggs, egg yolk and lemon juice. Pour the batter over the berries.

Baking and Topping Preparation:

Bake the pie for 25 minutes. While the pie is baking, stir together the sour cream, sugar and vanilla.

Remove the pie from the oven. Increase the oven temperature to 450 degrees. Spoon the sour-cream mixture over the top of the pie as evenly as possible and smooth gently with a rubber spatula. Return the pie to the oven for an additional 5 minutes.

Cool the pie at room temperature for about 30 minutes and refrigerate it until completely cold, at least 2 hours. Once cold, the pie should be loosely wrapped with plastic until it is served.

Garnish with fresh raspberries.
