Florentine White Bean Soup

Ingredients

6 cups stock, chicken or veg
2 cups navy beans, cooked
1 whole zucchini, cut into half moon shapes
1 whole onion, sliced
1 whole carrot, cut into matchstick size pieces
1/2 teaspoon marjoram
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon salt
1/8 teaspoon ground black pepper, to taste
1/2 lb spinach, washed and chopped
1/2 lb spinach egg noodles, prepared, cooked
1 teaspoon lemon juice

Preparation

Combine the stock, beans, zucchini, onion, carrot, spices, and salt and pepper in a large soup pot and bring to a gentle simmer over medium heat. When the vegetables are tender add the spinach and the noodles and turn off the heat.

Let sit for a few minutes and serve hot with a squeeze of fresh lemon juice.
